Coffee Ice Cream Sandwiches
I’ve been on such a baking spree during the last couple of weeks! I have so much butter, eggs, chocolate, and sugar on hand, I can’t help myself. Not to mention that it’s not helping anyone’s waistline this season…
It’s my sister’s birthday this week and she was craving ice cream cake for her birthday. She never ordered an ice cream cake, but I insisted that she’d have homemade ice cream sandwiches instead. She requested coffee ice cream and we got the ball rollin’!
Do a site search of ice cream sandwiches on Tastespotting and you’ll find at least 60 different recipes. The two most common ice cream sandwiches were the drop dough cookies (i.e. cookies that do not need a cookie cutter) and thinly baked brownies cut into shapes with any flavor combinations of ice cream imaginable wedged between the slices. My sister and I agreed coffee ice cream was going to taste best with chocolate. Brownies it was.
The baking process was relatively easy. I got an adorable whoopie pie pan for Christmas and it worked really well as a pan for ice cream sandwiches too. It only made 6 sandwiches so I poured the rest of the brownie batter on a cookie sheet lined with aluminum foil. The fun part was using my new cookie cutters and making the fancy squares and hearts. Molding the ice cream together this morning was the hardest part! It was messy but you get the hang of it after 1 or 2 sandwiches. It was great getting to just saran wrap everything and forgetting about it for a few hours.
And look how they turned out! Not bad for a first attempt. It was a hit with my sister and her friends! Happy 18th Birthday, Sis!
