12 Days of Baking: Red Velvet Cake Balls (Day 8 from 2010)

Incredibly late post on my part!  I made these last Christmas and they were my first attempt for cake balls.  You know the ones, the small cake like truffles made famous by BakerellaI got the courage to make about 45 cake balls for a holiday party and was thrilled to see how pleased my tasters were.  The ingredients were quite simple but the technique was the most tedious and difficult to figure out.  You need a good balance of temperature to get the cake and chocolates to set.  It’s messy but it’s fun if you can get an extra pair of hands to help you. 

One of my kiddos also bought me the official Cake Pops book and there were definitely more hints in it than the website. I attempted cake balls again Mother’s Day too.  Little balls of sugar and fat.  Beware, they’re addicting to eat!  And the ones at Starbucks taste nothing like the homemade ones.
