Carrot Cake Love

I was one of those weird kids that requested carrot cake over chocolate cake for special occasions.  Cream cheese is amazing! What can I say?  For a while I thought cream cheese was only carrot cake’s territory, little did I know it paired so well with other flavors and food such as red velvet cake and chocolate.  All good and more to love!

A few weeks ago my parents helped me car shop and we finally chose a car for me to use for work!  They were incredibly patient and helped me this huge burden on my back.  We’re still trying to figure other related things out, but the big part of it is over!  Overwhelmed, I couldn’t find enough ways to thank them for their support.  As a start, I made dinner and a cake.

Carrot cake to be exact.  The thought of making a cake from scratch just makes me cringe.  The last cake I tried to bake for my dad’s birthday was a sponge cake and that just fell flat.  This carrot cake looked harmless.  I found a recipe from All Recipes that looked promising.  Nothing too scary.  Putting everything together was intimidating.

It turned out better than I thought.  Next time I’ll just leave out the raisins.  Some of them sunk to the bottom and burned.  Reducing an egg might be a good idea too, the cake tasted a little too eggy.  Other than that, the cream cheese and texture of the cake was just right!
