I have to remember this from now on instead of the relying on these lengthy recipes I’ve searched for. After preparing the chicken and what not:
- Microwave corn tortillas for at least 40 seconds
- Preheat at 425 F, roll then spray, bake for 10 minutes (otherwise it will break)
- Lower heat to 400 F, spoon sauce over with cheese, bake for additional 30 mins
Those are the three main steps and I had to hunt for them through paragraphs of instructions. Keep it simple, Wordy-McGee. Now after all that work, I am eating a sad plate of wet enchiladas that resemble chunky tamales. Mexican food in a limbo. For a cook that takes her time, I am also a little impatient, hence mixing up the instructions. Next time. Third time’s a charm right?

If anyone needed this substitution for lighter cakes, you can use 1 cup and 2 tablespoons of cake flour for every cup of all-purpose. Thanks, Joy of Baking!
My friend just shared this story with me. This is the first time I’ve heard of anyone literally flipping a &#%$ about not getting a cupcake. I love me some sugary, buttery goodness but that’s ridiculous. Well I suppose people who reacted to the Whopper being taken off the Burger King menu would have a similar reaction here I guess.
